Ако се питате защо точно пица, ами защото у дома пицата е на особена почит от моите хлапетата и задължително, поне веднъж седмично я приготвям, като се стремя да има все пак някакво разнообразие. Този опит се оказа доста сполучлив и ако не друго, малката девойка прояде това зелено, грозно нещо, наречено спанак :o)

EN I was provoked by the invitation of Vania Petrova and a bright idea came to me for making something for kids and grown-ups – easy, fast and delicious and not at last healthy. If you wonder why pizza, that’s because the pizza is known with especially respect by my nippers and I make it obligatory at least ones a week, as I try to make some variety. This attempt came very well and my little girl began eating this green ugly think, named spinach.
So here is what you need:
Of course, dough for pizza. You can use ready-made dough or even you can use puff pastry but I always do it by myself, because of the remarkable taste.
The method is:
In a big bow sift 4 ½ cups of white flour. Add ½ salt and 1 tablespoon of dry yeast and stir. In other bow mix 1 tablespoon sugar into 1 ¾ cups cold water and ¼ cup of olive oil. Make a well in the flour and while stirring add the liquid. Transfer the dough over a working surface, sprinkled with flour and knead for a few minutes until the mixture becomes smooth and elastic. Divide the dough at equal parts depending on the wished size of the pizza. This dough is enough for 4 medium large pizzas; in this case 24 mini pizzas with diameter of 10 cm. Grease with olive oil each ball, put it in separate plastic wrap and leave in the fridge for at least one day, for rising.
So far it is OK. If already choused the dough, here is the filling.
In 2-3 tablespoons olive oil, stew 300-400 gr. of fresh spinach, 2-3 sticks of fresh onion, 2-3 tablespoons of tomato puree, salt and black pepper.
Preheat the oven to 250C. My little secret for crispy pizza is the pizza stone of Baumatic, so if you have the opportunities find it. Sure you won’t be disappointed. If you already have the stone, now is the moment to preheat it with the oven.
Sprinkle baking paper with corn flour and prepare the pizzas.
Roll out the dough at wanted size. With a spoon put the spinach mixture over the pizza and with the other side of the spoon make well and put into it quail egg or cherry tomato.
Bake 12-13 min. and sprinkle with few drops of olive oil before serving.
